This cake is deep brown when baked, and deliciously fragrant. The crumb is light and buttery, mixed with tender pieces of apple, the spice of cinnamon and little bursts of sweetness from the raisins. Here is the recipe for Almost Apple Pie Cake.

Note: Exchange the butter for half a cup of neutral-flavoured oil (such as macadamia oil) to make this cake dairy free
Almost Apple Pie Cake
80g butter, melted
3/4 cup rapadura
2 eggs
2 cups self-raising whole spelt or whole wheat flour
1 tsp bi-carb
1 tsp cinnamon
1/2 cup raisins, currants or sultanas
2 cups peeled chopped apples of your favourite variety (approx. 3 medium)
Method
1. Preheat oven to 180'C and line a round cake tin with baking paper.
2. In a bowl whisk together melted butter, rapadura and eggs. Add remaining ingredients and mix until just combined. (The batter will be quite stiff)
3. Spoon into prepared tin, smooth the top with a spatula and pop into the oven for 45-55 minutes or until a skewer inserted in the middle comes out clean.
4. Allow to cool in the tin for 10 minutes before turning out onto a cake rack or you can serve it after ten minutes if serving as a dessert.
