You may have noticed that I didn't do my usual "Happy" post yesterday
It's amazing how one sick animal seems to make the workload so much bigger. I didn't really have time to photograph things, until the very end of the week when Miss Gucci (the cow) decided she was going to get better.
And by then I had decided to do an In My Kitchen post, so I hope you'll forgive this week's missing Happy Post (and please be assured that it was a happy week - just a dis-organised one).

Anyway, here is the recipe for those Anzac biscuits that I promised you last weekend....I meant to post them but life kept getting in the way and there seemed to be more interesting things to blog about!

Anzac Biscuits
Ingredients:
:: 1 cup Rolled Oats
:: 1 cup Flour
:: 1 cup Desiccated Coconut
:: 1/2 cup Rapadura (or a good quality Brown Sugar)
:: 125g Butter
:: 1 tblsp Gold Syrup
:: 3 tblsp Boiling Water
:: 1 tsp Bicarb Soda
Method:
:: Preheat oven to 160 degrees celcius. Line two baking trays with baking paper.
:: In a large mixing bowl, combine oats, flour, coconut & sugar
:: Melt butter and add golden syrup, boiled water and bicarb soda
:: Add butter mixture to dry ingredients and combine well
:: Using a teaspoon, drop balls of the mixture onto prepared trays and flatten slightly. Bake in oven for 10 - 15 minutes, being careful not to burn. Allow to cool on a rack and store in an airtight jar.
Very enjoyable with tea {especially if you try one whilst still warm}

I just signed up to follow your blog. The biscuits look really delicious. I will have to do a little research to figure out how grams translate in the recipe. I am from the US, so our recipes don't usually state amounts in grams. We are watching the Super Bowl here while I blog. I will watch Downton Abbey later tonight. You have a lovely blog.

I've never tried making my own Anzac biscuits before. Are these are soft on the inside? I like them a bit soft.

DeleteIf you don't flatten them with the fork, and kind of leave them in a ball, then they'll stay a bit soft on the inside.
(I didn't flatten the ones pictured, normally they're really large and flat)

Oh I love these! I'm a Special Ed teacher and one year we had a visiting teacher from Australia with us for Anzac Day. She taught us and our little class how to make them. I've made them ever since :) Delicious. Thanks for sharing Sarah-Jane x

Mmm Anzac Biscuits (or cookies as I would call them!) are one of my favourite Aussie discoveries since moving here. Glad o hear that Miss Gucci is on the mend. :)
